3 Vegetarian Recipes For Your Picnic

If there's anyone at your picnic who doesn't eat meat, or you just want to try to be healthier, we've got three delicious, quick, and easy recipes for you and your picnic this summer:

Sweet Potato Salad

​Ingredients:
1.2kg sweet potato, peeled and cut into chunks
1 tbsp olive oil
For the dressing:
2 shallots (or half a small red onion), finely chopped
4 spring onions, finely sliced
small bunch of chives, snipped into quarters
5 tbsp sherry vinegar
2 tbsp extra-virgin olive oil
2 tbsp honey
  1. Heat oven to 200C/180C fan/gas 6. Toss the sweet potato chunks with the olive oil and some seasoning, and spread on a baking parchment-lined baking sheet. Roast for 30 - 35 mins until tender and golden. Cool at room temperature.
  2. When just about cool whisk together all the dressing ingredients with a little more seasoning and gently toss through the potato chunks – use your hands to avoid breaking them up.

Spiced Cauliflower With Chickpeas, Herbs, and Pine Nuts

​Ingredients:
1 large head cauliflower, broken into florets
2 garlic cloves, crushed
2 tsp each caraway and cumin seed
3 tbsp olive oil
400g can chickpea, drained and rinsed
100g pine nut
small bunch of parsley and dill, leaves torn
  1. Heat oven to 200C/180C fan/gas 6. Toss the cauliflower, garlic, spices, 2 tbsp oil and some seasoning in a roasting tin, then roast for 30 mins.
  2. Add the chickpeas, pine nuts and remaining oil to the tin, then cook for 10 mins more. To serve, stir in the herbs with your chosen dressing.

Spicy Bean and Corn Dip

​Ingredients:
395g can kidney bean in chilli sauce
400g can mixed bean, drained
326g can sweetcorn, drained
small red onion, chopped
1 red chilli, deseeded and chopped
small bunch coriander, chopped
350g vegetable sticks and tortilla chips, to serve
​In a food processor, whizz three quarters of the kidney beans and half the mixed beans until smooth. Tip into a bowl and add the remaining ingredients with some seasoning. Serve with crunchy vegetable sticks and tortilla chips for dipping.
